Since 1928, four hectares and then fifteen on the stony Cérinhac hillsides. From Étienne's pickaxe to Clémence's amphorae, the work has grown finer — the land itself has not moved.

The cooper

A former cooper in Cérinhac, Étienne buys four hectares of stony hillside that the local farmers judge “too hard for barley, too dry for wheat”. He plants Carignan, Aramon and Grenache. The first harvest, in 1932, gives a sturdy wine, sold by the barrel to the cafés of Béziers.

The pragmatist

Étienne's son takes over after the war. A pragmatic winegrower, he buys the neighbouring plots and grows the estate to twelve hectares. He brings in some machinery, makes his wine in concrete vats and sends his grapes to the cooperative in the hard years. A solid period, without a signature — but the vineyard grows and holds its ground.

The biodynamic

Étienne's granddaughter, trained in Bordeaux and then in Burgundy, Clémence takes the reins. She renames the estate after the russet stony ground that defines its terroir, pulls up the ageing Carignan to replant Syrah and Mourvèdre, and buys three hectares of Rolle on the higher ground. Conversion to biodynamic farming complete. Demeter in 2022.

Fifteen hectares

Clémence makes and blends the wines. Tristan, her partner, works the vines. Two local winegrowers, Jérôme and Miloud, all year round. Harvest by hand. Fifteen hectares, not one more — a decision, not a constraint.

Craft

Ageing,
with precision.

Each cuvée finds its vessel. No dogma — raw concrete for the fruit-led reds, wood for the single-plot wines, terracotta for the rare whites.

Concrete vats

For the young reds, for fruit. Steady temperature, no added aroma.

Demi-muids

600-litre French oak. For the single-plot wines. Ageing from 9 to 24 months.

Amphorae

Terracotta. For our rare Rolle. Fifteen hundred bottles a year.

No fining

Only a light filtration through gauze. Minimal sulphur, at bottling.

Certification

Demeter, since 2022.

Biodynamic farming, owned but quiet. No preaching, no mysticism — just one conviction: the vine, the soil and the cellar make up a single living whole. We look after them, in that order.
