Terroir
de Minuit
2019
Picked at night, in the cool. Aged in silence. A September cuvée: rare, dense, mineral.
A midnight
cuvée,
a rare harvest.
On two nights in September 2019, the pebbles were still giving back the heat of the day. Clémence chose those hours — after sunset, before dawn — to pick cool, intact grapes. The result: a wine of exceptional density, mineral and quiet.

Deep purple
colour,
garnet glints.
A dense surface. Slow, rich tears. A wine to look at before you drink it.
Dark fruit,
graphite,
damp undergrowth.
Crushed blackberry, blackcurrant. A touch of pepper. With air, it opens onto leather and truffle.
Dense, tight
tannins,
45-second finish.
A broad attack. The mid-palate holds. The finish is mineral, long, and dry in the best sense.
The cool
of a night
in 2019.
2019 was a dry year. On the surface, the pebbles stored the heat of the day. At night, the deep limestone gives off its coolness. Clémence waited for the coolest nights to pick: the grapes reach the cellar without warming up, and keep all their acidity. The result: rare concentration, and a fine, lifted acidity.
Ageing: 9 months in French oak demi-muids. No fining. A light filtration through gauze. The wine is made in the cellar, not by the cellar.
